What does the acidity level mean and why does it matter?

Acidity in olive oil measures the free fatty acids released from the breakdown of olives. It is not about taste; it is a marker of quality and freshness. The lower the acidity, the higher the polyphenol content, the healthier and purer the oil. To be classified as extra virgin, olive oil must have an acidity level below 0.8%. Querubi consistently measures around 0.16%, whilst the 2025 harvest comes in an acidity level of 0.08%. This places Querubi it among the very finest oils in the world.

Can you cook with Querubi olive oil?

Absolutely. Extra virgin olive oil is stable at high temperatures (up to around 200°C) and ideal for cooking, roasting, or sautéing. Its natural antioxidants protect it from breaking down under heat. Should you have a shot of olive oil every morning?

Many people do and it is an excellent habit if you enjoy it. How should you store olive oil?

Olive oil’s main enemies are light and oxygen. Store it in a cool, dark place and always reseal the bottle after use and avoid keeping it in direct sunlight. Querubi is bottled in dark glass bottles to protect the oil naturally and each bottle is wax-sealed for extra freshness and to reduce oxygen exposure.

How can I tell if the olive oil is from the most recent harvest?

Look for the harvest date (not just the best before date) on the label. Olive oil is a fresh product and it is best consumed within 12 to 18 months after harvesting. Querubi bottles are marked with the year of harvest, so you know when your oil was produced. Our 2025 harvest, for example, will be available from early November 2025, freshly pressed and immediately bottled.

Is organic olive oil better than non-organic olive oil?

Yes, when but only when it is genuinely organic. Organic olives are harvested from trees that are grown without synthetic fertilisers or chemicals, protecting both our soils, the farm’s biodiversity and your health. Since we do not use pesticides, the trees must defend themselves against pests and they do so by producing higher levels of polyphenols. The high level of polyphenols creates the health benefits that are associated with high quality olive oil.

Is extra virgin olive oil a health food product?

Extra virgin olive oil is one of nature’s most complete foods. It is the cornerstone of the Mediterranean diet, known for its benefits in heart health, longevity and anti inflammatory benefits. Because Querubi is rich in polyphenols and low in acidity, it is not just a food, it is a functional ingredient that supports health in every sense.

Why is Querubi olive oil a rare oil?

Querubi is a farm that operates on strict organic principles right from the start of our farming operations in 2007. We grow olive trees on soils that have never been treated with agricultural chemicals. We do not stress our trees with growth enhancing chemicals or fertilisers but simply let the trees produces fruit at their own rhythm. We only produce oil from our own olives (single estate) and we only use olives to produce our olive oil (pure olive oil). We only can sell what the trees give us and hence produce only a limited quantity each year. We do everything ourselves, from planting to pruning, harvesting, bottling and transport to ensure quality and traceability. This combination of purity, traceability and small-scale craftsmanship makes Querubi a truly rare and exceptional olive oil. Please ask us for our testing reports if you are interested.

Do you use any plastic on the farm or in your packaging?

We really try very hard not to use any plastics on the farm and especially not in the packaging of our bottles. On the farming side we by now have eliminated all plastics in our day to day operations. The same goes for our packaging. The glass bottles are made from recycled glass, the stopper is made from cork and wood, the wax is as natural as we can get it and the carton packaging is made from recycled cardboard. As plastic free and sustainable as we can get it for now.
