As farmers, our foremost responsibility is the stewardship of our soils. Only living, thriving soils can yield exceptional fruit, and only exceptional fruit can give rise to extraordinary olive oil. The harmful effects of synthetic agricultural chemicals on the vitality of sub-soil life are well established. At Domaine de Querubi, our soils have been cultivated organically from the very beginning, never touched by chemical inputs. The result is a vibrant ecosystem teeming with microbial life, fertile, balanced soils that nurture vigorous olive trees and sustain remarkable biodiversity.
Exceptional Quality Olive Oil
We firmly believe that by allowing our trees to grow at their natural pace, free from the stress of chemical inputs, we can produce fruit of truly exceptional quality.
Immediately after harvest, our olive oil is analysed by multiple independent laboratories to verify its excellence. The most important indicator of olive oil quality is its acidity, the lower the level, the higher the quality the oil. The results from our 2025 harvest revealed an extraordinary low acidity level of less than 0.1% and a polyphenol content exceeding 600 mg/kg. Many factors contribute to such remarkable results, yet the most significant remains our commitment to letting the trees thrive in harmony with nature.
From the very beginning we have been committed to a single principle: never to use synthetic fertilizers, herbicides, pesticides nor any other agricultural chemicals.

2008
Planting The Olive Trees
In 2008, we planted 12,000 young olive trees with a single, ambitious goal, to create organic olive oil of the highest quality. The years that followed were marked by dedication, patience, and respect for the rhythms of nature. With a small but passionate team of local organic advocates, we nourished our virgin soils with natural composts, installed solar powered underground irrigation systems and gently shaped the thriving orchards from the nurturing soils.
2005
The Beginning
Drawn by its untamed beauty and the promise of a simpler way of life, we acquired Domaine de Querubi. Amid its never before farmed soils, we discovered an abundance of flourishing wild olive trees, an encounter that sparked a vision: to transform this untouched land into an organic olive estate, guided by the most rigorous ecological principles.
